Corn is the world’s most produced grain by weight, and while it is often dismissed as a low-nutrient starch, whole corn delivers useful fibre, lutein, zeaxanthin and phenolic acids. A 100 g portion of sweet corn delivers roughly 3.4 g of fibre, vitamin C, folate and carotenoids. That combination is why corn appears in research on eye health and heart health.

Why corn is good for you

Corn’s lutein and zeaxanthin content is exceptional, and these carotenoids accumulate in the macula, protecting against age-related macular degeneration and cataracts. The fibre content is moderate, and the phenolic acids — especially ferulic acid — have antioxidant and anti-inflammatory effects. The caveat is that corn is high in natural sugars and has a high glycaemic index, which means it spikes blood glucose more than many other vegetables. Corn also contains zein, a prolamin protein that can trigger reactions in people with gluten sensitivity.

The label shows the numbers, but the practical message is that whole corn is a useful source of lutein and fibre, but it should be eaten in moderation by people watching blood sugar. Popcorn and tortilla chips are not equivalent to whole corn.

How to buy and use corn

Choose firm, plump kernels with tight husks. Store in the fridge and use within a couple of days for best sweetness. Cook by boiling, grilling or steaming. Use corn on the cob with olive oil and salt, or cut kernels into salads, soups and stir-fries. Popcorn — air-popped without butter — is a high-fibre whole-grain snack. Cornmeal works in porridge, bread and polenta.
