High-Protein Greek Yogurt Parfait

Proof that high-protein can also be a treat: layers of thick non-fat Greek yogurt with berries, toasted almonds, pumpkin seeds and a scattering of chia. Ready in minutes, whether as a fast breakfast or an afternoon snack.

  1. Toast the flaked almonds in a dry pan over a medium heat for a minute or two until golden, then set aside to cool.
  2. Spoon a third of the Greek yogurt into the bottom of a glass or jar.
  3. Scatter over some of the strawberries and blueberries.
  4. Add another layer of yogurt, followed by more berries and a sprinkle of pumpkin seeds.
  5. Finish with the last of the yogurt and top with the toasted almonds, the remaining berries and the chia seeds.
  6. Drizzle with a little honey if you like, and serve straight away or chill until needed.

Why it works

Non-fat Greek yogurt is the star here, delivering a substantial dose of protein with very little fat. The almonds, pumpkin seeds and chia add crunch along with healthy fats, fibre and minerals, while the berries bring antioxidants and natural sweetness. It is a genuinely high-protein option that comes together in the time it takes to toast a few nuts.
