Measurement of diamine oxidase (DAO) during low-histamine or ordinary diet in patients with histamine intolerance

In 18 people diagnosed with histamine intolerance, serum DAO did not change meaningfully on a low-histamine diet compared with a normal mixed diet, although digestive and skin symptoms improved on the low-histamine diet. The authors conclude that DAO measurement says little about diet-related changes.
