What serum uric acid measures
Serum uric acid is the level of urate circulating in your blood — the end-product of purine metabolism. Purines come both from your own cells and from food, and uric acid is what remains when the body breaks them down. Normally it dissolves in the blood and leaves through the kidneys; when it accumulates, it can crystallise in joints and tissues.
Why it matters
The headline concern is gout: when uric acid is persistently high, sharp urate crystals can form in a joint and trigger sudden, intense inflammation. The link between elevated urate and gout is well established. High levels are also associated with kidney stones and with broader metabolic risk, though here the evidence is more about association than proven cause.
The levers that move it
Diet shifts uric acid, though usually modestly compared with medication:
- Purine-rich foods raise it. The biggest contributors are organ meats and some seafood; among the foods on this site, sardines are relatively high in purines. Plant sources of purines appear to matter far less for gout risk.
- Fructose and alcohol, especially beer and spirits, push uric acid up — the evidence for both is reasonably strong.
- Coffee, low-fat dairy and good hydration are each associated with lower levels, though these links are observational rather than proven cause and effect. A source of dairy such as plain Greek yoghurt fits this pattern.
- Losing excess weight tends to lower urate and is one of the more dependable dietary levers.
For people with established gout, diet is a useful support but rarely sufficient on its own — urate-lowering medication is the clinical mainstay, and food works best alongside it.
The reference range
For those managing gout, a common treatment target is a serum uric acid below 6.0 mg/dL, the level below which existing crystals tend to dissolve. Treat this as a general reference; your own target depends on whether you have gout and on your wider clinical picture.
